The percentage describes patterns in the readable text. It does not prove who wrote the document, and embedded images are inventoried separately from the text score.
Important limitation: Image-only scans may contain too little extractable text and need OCR. Password-protected files, tables and heavily designed layouts can also reduce coverage.
